When I do my food shopping, I tend to buy “greek” ingredients. I love how olive oil, olives, tomatoes, feta, lemon, artichokes, tuna, and fresh greens tend to meld perfectly together and makes everything from soup to salad to pasta great. Everything works together bouncing immense flavor off of each other. My greek pasta is not only a cheap eat, but is also comfort food. The feta melts around the noodles, as if it is a salty cheese sauce. The tomatoes, artichokes, and olives are chewy and add extra texture to the dish. The tuna is salty and meaty. This is a must try for a rainy night.
Easy Greek Tuna Pasta
- 1/2 box pasta
- 1 onion diced
- 2 cloves of garlic crushed
- 1/2 pint of cherry tomatoes halved
- 1/4 kalamata olives halved
- 1/2 can of artichokes slices
- 1/2 cup feta cheese
- olive oil
- pepper
- Juice of 1/2 lemon
Directions
- Boil water for pasta in a pot. Cook according to directions
- In a sauce pan heat the olive oil
- Saute onions and garlic in the olive oil
- Add cherry tomatoes, olives, tuna, and artichokes
- Cook down until tomatoes have wilted
- Add a bit more olive oil to taste with pepper
- squeeze the lemon juice over the pasta
- To make the mixture more “sauce” like, add about 1/2 cup of pasta water and toss the cooked pasta.
- Turn the heat up and you will soon see a sauce cooking around the pasta.
- Toss in the feta and feel free to sprinkle some basil on top
