Easy Greek Tuna Pasta! OPA!

When I do my food shopping, I tend to buy “greek” ingredients. I love how olive oil, olives, tomatoes, feta, lemon, artichokes, tuna, and fresh greens tend to meld perfectly together and makes everything from soup to salad to pasta great. Everything works together bouncing immense flavor off of each other. My greek pasta is not only a cheap eat, but is also comfort food. The feta melts around the noodles, as if it is a salty cheese sauce. The tomatoes, artichokes, and olives are chewy and add extra texture to the dish. The tuna is salty and meaty. This is a must try for a rainy night.

Easy Greek Tuna Pasta 

Ingredients

  • 1/2 box pasta
  • 1 onion diced
  • 2 cloves of garlic crushed
  • 1/2 pint of cherry tomatoes halved
  • 1/4 kalamata olives halved
  • 1/2 can of artichokes slices
  • 1/2 cup feta cheese
  • olive oil
  • pepper
  • Juice of 1/2 lemon

Directions 

  1. Boil water for pasta in a pot. Cook according to directions
  2. In a sauce pan heat the olive oil
  3. Saute onions and garlic in the olive oil
  4. Add cherry tomatoes, olives, tuna, and artichokes
  5. Cook down until tomatoes have wilted
  6. Add a bit more olive oil to taste with pepper
  7. squeeze the lemon juice over the pasta
  8. To make the mixture more “sauce” like, add about 1/2 cup of pasta water and toss the cooked pasta.
  9. Turn the heat up and you will soon see a sauce cooking around the pasta.
  10. Toss in the feta and feel free to sprinkle some basil on top

Williamsburg Walks- A community picnic/ extreme people watching

Joining Williamsburg Southside CSA was a choice I made earlier in the year. Good produce, good prices! However as the CSA runs on volunteers, one must fulfill individual hours to help out the organization. I got to choose from a long list of options I wanted to help out with. I chose to organize a picnic during Williamsburg Walks with a few of my wonderful friends. Today I got to experience Williamsburg as more of a community spot, then a place to watch interesting hipsters. 

I arrived on N6th and Bedford to find grass laid out on the cement. I unfolded my picnic blankets and towels, and removed jars and canisters of food. As it is pretty obvious, I take eating extremely seriously. Therefore, packing my bag of food had to be carefully planned out. I decided to pack jars of almonds and dried apricots to snack on. A fresh baguette from Eataly, as well as fresh strawberries and veggies from the farmers market. My friend hand shook fresh local cream to make sea salt butter, as well as I made a blackberry crumb bars from Martha Stewart’s website (the best site on the internet). To keep ourselves hydrated I made a raspberry, lemon, ginger, agave soda. Just add a bag of frozen raspberries to a saucepan with a zest of one lemon, 2 cups of water, 1 inch hunk of ginger, and 4 tablespoons agave, boil until raspberries have melted. Strain so the seeds and syrup separate. Just add some seltzer to the syrup and it makes a homemade soda. 

Not only was it great to eat some food outside on the streets of Williamsburg, but it was great seeing friends come and go, as well as  getting to meet many friendly locals. As a summer goal, I hope to participate again in these local events. NYC is great in the summer, so those who don’t live here just give it a chance. Come to community picnics, street fairs, and outdoor screenings. 

A Long Post of Pictures!

Now that the film festival I work on is over, I can get back to blogging. Over the course of the last two months I have been vigorously working, and therefore cooking has been put on the side burner. When I wasn’t eating seared tuna on crackers and fried mac and cheese at these cocktail parties, I was trying to get home to make something tasty. Though I would LOVE to post all the recipes that I made, I am just going to post the pictures. Please let me know if you want the recipe! mmmmmmm tasty!
